INGREDIENTS
- ½ cup raisins
- ¼ sherry
- ½ cup long-grain white rice 1
- cinnamon stick
- 1 cup sugar
- 4 cups milk Ground cinnamon, for dusting
- Lemon rind
- Pinch of salt
- Water
Directions
Soak rice in enough hot water to cover for 10 minutes. Rinse in cold water and drain. Place in a sauce pan with lemon rind.
Add 1 cup of water and pinch of salt. Bring to a boil. Reduce heat and cover and simmer until all water has evaporated. Remove rind.
Add milk, sugar and cinnamon to taste.
Cooke uncovered until most of the milk has been absorbed.
Add raisins and sprinkle with cinnamon powder.
May be served chilled are warm.ii
